Mocha Cupcakes! ☕


Coffee & Chocolate are a match made in heaven. With only a little Coffee added, it brings a wonderful chocolaty boost to these scrumptious cupcakes! And don't worry, if you don't like coffee.. add more chocolate! 
These Cupcakes are so moreish; I have to take photos quick before Matt demolishes them! They are quite easy to make and you can't really go wrong! Here's how to make them! :)

Ingredients:
Now, with the ingredients I always think of how many I am making and use the same amount for everything. Here, I have made 6 cupcakes so I have made sure everything is 100g. You can alter this if you want to make more or less. 

Cupcakes
100g Self Raising Flour
100g Caster Sugar
100g Butter (Melted)
100g Eggs ( Just weigh out how many eggs make 100g, I had a large egg so only needed one)
1 Tablespoon instant Coffee (Diluted in a splash of warm water)
50g Dark Cocoa Powder
A splash of Milk

Icing
150g Icing Sugar
100g Cocoa Powder
50g Softened Butter

Method:

Place Flour, Sugar, Cocoa Powder in a bowl and mix.


Next, Add Egg, splash of Milk and melted Coconut oil/ Butter and mix. Then add Coffee and blend.


Tip: Don't mix too much as you don't want to knock the air out of the mix, gently fold until it looks something like this..


Place a tablespoon of mixture into cupcake cases.


Put cupcakes in the middle of the oven for 15 mins at 180 ºc. If bored during this time, I tend to sit on the side and lick the bowl and spoon. People might say it's not good to, but it's so yummy! 


After 15 mins, they should look like this. Give them a little tap with your finger, they should bounce back. Place on a cooling rack for 10 mins.


For the icing, add Icing Sugar, Cocoa Powder and Butter in a bowl and mix. If it's too runny or too stiff, add more Icing Sugar or Butter accordingly.


You can then decorate them with anything you like. Buttons, M&M's, Smarties, or Maltesers.


As you can see, I ran out of Maltesers as I might of tried a few during the baking process. To make sure they were okay to eat of course!
